Roast Beef with Spicy Fruit Sauce - Mustig rostbiff med kryddig fruktsås

ROAST BEEF WITH SPICY FRUIT SAUCE
Mustig rostbiff med kryddig fruktsås

Serves 8

1 roast beef, approx 3.2 lbs
salt, black pepper
2 tablespoons butter
1 onion in wedges
2 garlic cloves, crushed
1.7 oz diced streaky bacon
1 parsnip in pieces
1 carrot in pieces
1 piece celeriac (celery-root) in smaller pieces
1 apple in pieces
4 dates, pitted
0.2 cup molasses
1 piece whole cinnamon
2 teaspoons dried thyme
1 bay leaf
1.2 cups pale ale

Sauce:
pan juices, strained and sieved
0.8 cup cream
1 tablespoon fresh lemon juice
salt, pepper
2 tablespoons Maizena
3½ oz red grapes, split and pitted
split cherry tomatoes
pitted black olives
fresh thyme


Preheat oven to 392F.

Wipe off the meat and rub with salt and pepper. Bind it up with cooking twine if necessary. Brown all around in butter in a frying pot. Add onion, garlic and bacon and cook for a while with the meat. Place roots, apple, dates, molasses, cinnamon, thyme and bay leaf in the pot next to the meat. Insert a meat thermometer in the thickest part of the meat. Dilute with ale and braise the meat on low heat, covered, until the inner temperature is 158F. Turn the meat over once while braising. Lift up, remove the twine and leave for about 10 minutes before slicing it.

Strain the juices from the pot and push roots and fruit through a sieve. Bring to a boil and dilute with cream. Thicken with Maizena while stirring. Flavor to taste with lemon juice, salt and pepper. Add grapes and heat the sauce up. Serve the meat with the sauce, roast potatoes and boiled vegetables.
