TOMATO COD IN THE OVEN
Torsk med tomat i ugn

Serves 2

7 oz fillet of cod
salt, pepper
2 tomatoes
2 tablespoons shredded fresh basil
2 teaspoons olive oil
0.4 cup grated cheese

Decoration:
fresh basil

For serving:
boiled potatoes
mixed lettuce leaves


Preheat oven to 392F.

Place the fish in a greased, oven-proof pan and flavor with salt and pepper. Roughly chop the tomatoes och sprinkle over the fish together with basil. Drizzle with the oil and sprinkle with cheese. Bake in the oven for 10 to 15 minutes, depending on the thickness of the fillets. Decorate with basil and serve with boiled potatoes and lettuce leaves.
