WHITE CHOCOLATE PARFAIT WITH
MARINATED BERRIES
Vit chokladparfait med marinerade bär
Serves 8
5 egg yolks
0.4 cup powdered sugar
1½ teaspoons vanilla sugar
7 oz white chocolate
1.2 cups heavy cream
0.8 cup creme fraiche
Marinated berries:
0.2 cup sugar
4 tablespoons water
grated zest from 1 orange
fresh juice from 1 orange
0.8 cup berries, e.g. raspberries
and strawberries
Beat the egg yolks, powdered sugar and vanilla sugar until fluffy. Break the chocolate in pieces and put in a bowl. Melt the chocolate over a waterbath. Remember not to use too high heat when you melt white chocolate. Remove from heat before the chocolate has completely melted and let it finish melting in its own heat while stirring. Be careful that it doesn't burn to the bottom of the saucepan. Stir the chocolate into the egg batter.
Beat the cream and gently stir it into the egg batter together with creme fraiche. Pour the batter in an oblong baking pan and leave in the freezer for at least 8 hours.
Marinated berries:
Bring sugar and water to a boil. Remove from heat and stir in orange zest and juice. Allow to cool. Mix in the berries and leave to marinate for 1 hour.
Serve the berries with the parfait.
