WHITE CHOCOLATE RASPBERRY MUFFINS
Muffins med vit choklad och hallon
12 muffins
0.4 cup sugar
3½ oz butter
½ tablespoon vanilla sugar
2 eggs
0.4 cup soured cream
1 cup flour
2 teaspoons baking powder
1 teaspoon crushed cardamom seeds
(crushed in a mortar)
5.3 oz white chocolate
12 large raspberries
Preheat oven to 347F.
Beat butter, vanilla sugar and 0.4 cup sugar until smooth. Add the eggs, one by one, stirring continuously. Add the soured cream. Mix flour, cardamom and baking powder in a bowl. Mix it into the egg batter.
Roughly chop the chocolate and add half to the batter. Divide the batter into muffin tins, place a raspberry in each and top up with remaining chopped chocolate. Bake for about 25 minutes until done (try with a tester).
