BLACKCURRANT MOUSSE WITH JELLY
Vinbärsmousse med gelé
Serves 4
Mousse:
3 gelatin sheets
or 1½ teaspoon gelatin powder
0.6 cup concentrated blackcurrant drink
0.8 cup heavy cream
0.2 cup sugar
0.8 cup Turkish yogurt
0.6 cup blackcurrants
2 tablespoons powdered sugar
Jelly:
2 gelatin sheets
or 1 teaspoon gelatin powder
0.4 cup concentrated blackcurrant drink
Decoration:
redcurrant bundles
Mousse:
Soak the gelatin sheets in cold water for about 5 minutes, or do as you normally do with the powder. Squeeze out the excess liquid and melt them in a saucepan with 0.2 cup of the blackcurrant drink. Mix with remaining drink. Beat the cream with the sugar and blend in yogurt and blackcurrant mixture. Mix blackcurrants and powdered sugar and stir it into the mousse, not too carefully. Divide in serving glasses and leave to set in the fridge, about 3 hours.
Jelly:
Soak the gelatin as above. Melt the sheets with the blackcurrant drink in a saucepan. Cool until the jelly is viscous. Spoon it over the mousse and decorate with blackcurrants when the jelly has set.
