CHILI CURRY BAKED PORK CHOPS

Serves 4
1.1 lb boneless pork loin
butter or margarine
salt, pepper
1 banana
0.4 cup peanuts
Sauce:
1 cup creme fraiche
0.2 cup chili sauce
1 teaspoon curry
1 tablespoon Maizena
For serving:
salad
rice or potatoes
Preheat oven to 437F.
Cut the meat in 4 thick slices. Wipe them off and put them in a greased, oven-proof pan. Sprinkle with salt and pepper.
Peel and split the banana in two, then each part lengthwise. Place a piece of banana on each chop.
Sauce:
Beat together creme fraiche, chili sauce, curry and Maizena in a bowl.
Spread the sauce over the pork chops and sprinkle with peanuts. Cook in the middle of the oven for about 20 minutes. Serve the pork chops with rice or potatoes and a salad.
