ORANGE KIWI PIE
Apelsinpaj med kiwi
Serves 6
1.2 cup flour
2 tablespoons sugar
5.3 oz butter or margarine
2 tablespoons water
Filling:
2 eggs
0.4 cup sugar
0.8 cup creme fraiche
0.2 cup flour
1 teaspoon vanilla sugar
zest from 1 orange
fresh juice from 1 orange
Decoration:
orange
kiwifruit
lemon balm
Preheat oven to 392F.
Chop together flour, sugar and butter to a crumbly mixture. Add water and quickly work to a dough. Place in a springform pan, diameter approx 9 inches. Prick with a fork and leave in a cold place for 30 minutes. Pre-bake the pie crust for 10 minutes.
Filling:
Beat eggs and sugar until fluffy. Mix in creme fraiche, flour, vanilla sugar, orange zest and orange juice. Pour the filling in the pie crust and bake for 20 minutes.
Allow the pie to cool and decorate with orange, kiwifruit and lemon balm.
