RASPBERRY CAKE WITH VANILLA AND CARDAMOM
Hallonkaka med vanilj och kardemumma
1 cake
1.7 oz butter
2 eggs
0.6 cup sugar
0.8 cup flour
2 teaspoons baking powder
1 tablespoon vanilla sugar
Filling:
1.6 cups raspberries
3 tablespoons sugar
1 teaspoon freshly crushed cardamom
Preheat oven to 347F. Grease and flour a baking pan, capacity 6 cups.
Melt the butter. Beat eggs and sugar until fluffy. Stir in the butter and add flour mixed with baking powder and vanilla sugar.
Filling:
Mix raspberries, sugar and cardamom.
Pour the batter in the pan, sprinkle with raspberries and gently press them in. Bake in the middle of the oven for 40 to 45 minutes. Try with a cake tester if it's baked through.
