CREAMY CHICKEN PIE WITH BRIE
Krämig kycklingpaj med brie
Serves 6
2 chilled puff pastry rolls
Filling:
1 leek
3 garlic cloves
1 oz butter
14 oz chicken fillets
0.4 cup white wine
0.4 cup water
2 tablespoons concentrated
chicken fond
2 tablespoons Maizena
salt, pepper
0.4 cup chopped parsley
3½ oz brie
1 egg
For serving:

Preheat oven to 392F.
Filling:
Rinse and slice the leek. Peel and chop the garlic. Sauté leek and garlic until tender in a frying pan with butter. Cut the chicken in 3/4 inch cubes and put it in the frying pan with the leek for a couple of minutes. Add wine, water and fond and boil for 5 minutes. Stir Maizena with some cold water and thicken the sauce. Bring to a boil and flavor to taste with salt and pepper. Add parsley and cool slightly.
Roll out the puff pastry and put one of them in a springform pan, diameter approx 9 inches. Pour in the filling, slice the brie and put on top. Put the other puff pastry plate over the filling and pinch around the edges. Make some cuts in the dough and brush with beaten egg and bake for about 40 minutes until nicely colored. Leave the pie for about 10 minutes before serving with a salad.
