MANGO STRAWBERRY CAKE
Mangotårta med jordgubbar
1 cake
5.3 oz digestive biscuits
3½ oz butter or margarine
2 tablespoons sugar
3 gelatin sheets
or 1½ teaspoons gelatin powder
14 oz mango, frozen and thawed
0.2 cup sugar
1.2 cup heavy cream
7 oz cream cheese
0.2 cup sour Cream

Preheat oven to 347F.
Crush the biscuits, preferably in a food processor. Melt the butter and mix with crushed biscuits and sugar. Flatten this out in the bottom of a greased springform pan and bake for 5 minutes.
Soak the gelatin in cold water for 5 minutes, or do as you normally do with the powder. Mix mango and sugar to a puré. Take up the gelatin, squeeze out any excess liquid and melt them together with 0.1 cup of the mango puré in a saucepan. Stir in remaining mango puré.
Beat the cream and beat in cream cheese and sour cream. Gently stir in the mango. Pour this in the spring form pan and leave in the fridge for at least 3 hours. Decorate with strawberries and wedges of fresh mango.
