MUSTARD PATTIES WITH ONION

Serves 2
10.6 oz ground meat (beef + pork)
1 tablespoon Dijon mustard
2 tablespoons water
salt, pepper
2 tablespoons butter or margarine
1 red onion
1 shallot
0.6 cup water
1 tablespoon concentrated veal fond
1 teaspoon Maizena
Mix the ground meat with mustard, water, salt and pepper and shape to 4 patties. Fry in butter for about 4 minutes on each side. Take them up and keep warm.
Peel the onions and cut in wedges. Sauté in butter until tender. Add water and fond and bring to a boil. Thicken the sauce and boil for 3 minutes. Flavor to taste with salt and pepper.
Serve with boiled potatoes, a dab of mustard and a salad.
