"QUEEN" ALMOND PASTE CAKE
Drottningkaka med mandelmassa
1 cake, 8 pieces
Here we have that "Queen" combination again - it's blueberries and raspberries. Somehow it's got this name in Sweden.
2 large eggs
0.7 cup sugar
0.8 cup flour
1 teaspoon baking powder
7 oz almond paste
8.8 oz blueberries and raspberries
3½ oz cold butter
Decoration:
powdered sugar
fresh mint
For serving:
whipped cream
Preheat oven to 347F.
Grease a pie pan, approx 9 inches diameter. Beat eggs and sugar until fluffy. Mix flour, baking powder and grated almond paste in a bowl. Stir this into the egg batter and spread it out in the pan. Divide the berries over the dough. Cut the butter in thin slices, I use a cheese cutter, and cover the berries. Bake on the lowest shelf of the oven for about 40 minutes. Allow to cool slightly before serving.
Sift with powdered sugar and decorate with mint. Serve with whipped cream.
