PEAR MERINGUE CAKE
Päronkaka med maräng
Serves 4
4½ pears
4 bitter almonds
2 large eggs
0.3 cup sugar
0.8 cup creme fraiche
2 tablespoons flour
1 teaspoon vanilla sugar
For serving:
vanilla ice cream
Preheat oven to 392F.
Peel, core and cut the pears in wedges. Place them in a large, greased, oven-proof pan or in oven-proof serving bowls.
Finely grate the bitter almonds. Beat eggs and sugar until fluffy. Beat in the almonds, creme fraiche, flour and vanilla sugar. Pour the batter over the pears and bake in the middle of the oven for 25 to 30 minutes.
Serve the pear cake straight from the oven with vanilla ice cream.
