REDCURRANT MERINGUE CAKE
Vinbärskaka med maräng
1 cake
2 eggs
0.4 cup sugar
0.6 cup flour
1½ teaspoon baking powder
1 tablespoon cold water
approx 2 cups trimmed redcurrants
0.3 cup sugar
Meringue:
3 egg whites
0.4 cup sugar
Preheat oven to 482F.
Beat the eggs until fluffy together with 0.4 cup sugar. Blend in the flour mixed with baking powder and water. Pour in a greased, floured springform pan, diameter approx 9 inches, and bake on the lowest shelf of the oven for about 10 minutes. Lower the heat to 302F.
Beat the egg whites until stiff and gently blend in 0.4 cup sugar. Spread out the berries, mixed with 0.3 cup sugar, over the cake. Spread or pipe out the meringue and bake in the middle of the oven for anoter 15 minutes or so.
Serve lukewarm with vanilla sauce or half-melted vanilla ice cream.
