TOMATO SOUP WITH CREME FRAICHE
Tomatsoppa med creme fraiche-topp
Serves 4
2 onions
2 garlic cloves
2 tablespoons butter
2 cans crushed tomatoes,
each approx 14 oz
1.6 cup water
2 vegetable bouillon cubes
2 teaspoon finely chopped thyme
0.2 cup white wine (alcohol free
if you wish)
0.4 cup creme fraiche
Topping:
creme fraiche
thyme
For serving:
toast
Peel and finely chop onion and garlic. Sauté in butter in a saucepan without coloring. Add crushed tomatoes, water, bouillon cubes and chopped thyme. Bring it all to a boil, then boil over low heat for about 10 minutes. Add white wine and creme fraiche, stir and heat the soup through.
Serve in bowls and top with a dab of creme fraiche and thyme, and as a special tip you can sprinkle with some sort of roasted seeds. Serve with toast.
