RHUBARB COBBLER

Serves 4
1 lb 5 oz rhubarbs
1 oz butter
0.2 cup cane sugar
Dough:
3½ oz butter
0.4 cup sugar
0.6 cup oats
0.4 cup flour
1 teaspoon vanilla sugar
1 teaspoon baking powder
0.2 cup heavy cream
1 egg
For serving:
vanilla sauce
Preheat oven to 347F.
Trim and slice the rhubarbs and quickly fry them in butter and sugar in a frying pan. Place in a large, oven-proof pan or 4 oven-proof serving bowls.
Dough:
Beat together room-tempered butter and sugar. Add oats, flour, vanilla sugar and baking powder and blend well. Stir in cream and egg.
Divide the dough over the rhubarbs. Bake in the middle of the oven until nicely colored, about 30 minutes. Serve with vanilla sauce.
