WINTER SOUP WITH BASIL CREME
Vintersoppa med basilikakräm
Serves 4
10.6 oz very thinly sliced beef,
"minute steaks"
2 spicy sausages
2 tablespoons butter or margarine
1 leek
5 potatoes
8.8 oz broccoli
14 oz canned crushed tomatoes
4 cups water
2 vegetable bouillon cubes
salt, pepper
Basil creme:
0.6 cup creme fraiche
0.4 cup grated Parmesan cheese
3 tablespoons chopped parsley
Shred the meat and slice the sausages. Fry in a large pot with butter. Rinse, trim and slice the leek, peel and dice the potatoes and split the broccoli in florets. Put leek and potatoes in the pot and add crushed tomatoes, water and bouillon cubes. Boil for 10 minutes. Add broccoli florets and flavor to taste with salt and pepper. Boil for a minute or so.
Basil creme:
Stir creme fraiche, Parmesan and basil and serve with the soup.
