BROCCOLI SOUP
Broccolisoppa
Serves 2
7 oz broccoli
2 carrots
2 potatoes
½ onion
2 cups water
1 vegetable bouillon cube
0.8 cup regular milk
salt, pepper
Split the broccoli in small florets. Peel and dice carrots and potatoes. Peel and chop the onion. Bring water and bouillon cube to a boil and add carrots, potatoes and onions. Boil for 10 minutes. Add the broccoli and boil for 5 minutes. Take up a couple of florets and set aside while you mix the soup until smooth.
Add milk and bring to a boil. Flavor to taste with salt and pepper and add the florets. Serve the soup.
