CARROT SOUP WITH GARLIC CROUTONS

Serves 2
1 onion
7 oz carrots
oil for frying
1½ teaspoons curry
2 cups water
0.2 cup red lentils
fresh lemon juice
salt, pepper
1 celery stem
Garlic croutons:
2 slices sourdough bread
1 garlic clove
Peel and chop the onion. Peel and slice the carrots. Sauté onion and carrots in a pot with oil for about 5 minutes. Add curry, water and rinsed lentils and boil for 20 minutes. Mix the soup until smooth and flavor to taste with lemon juice, salt and pepper. Add shredded celery when serving.
Toast the bread (trim off the crusts) and rub them with a split garlic clove. Dice it or cut in triangles and serve with the soup.
