BLUEBERRY PISTACHIO MERINGUE
Blåbärs- och pistagemaräng
1/3 cup powdered sugar
1 + 1 teaspoons vanilla sugar
1 teaspoon Maizena
1 teaspoon lemon juice
2 tablespoons pistachios, unsalted
2/3 cup heavy cream
4 oz fresh blueberries
Heat the oven to 300F.

2 egg whites
1/3 cup sugar1/3 cup powdered sugar
1 + 1 teaspoons vanilla sugar
1 teaspoon Maizena
1 teaspoon lemon juice
2 tablespoons pistachios, unsalted
2/3 cup heavy cream
4 oz fresh blueberries
Heat the oven to 300F.
Beat the egg whites to a stiff foam and add the sugar,
little by little, towards the end. Mix powdered sugar, 1 teaspoon vanilla
sugar, corn flour or Maizena and lemon juice. Fold this into the egg batter and
beat for another minute.
Spread out in an oven-proof dish, approx 8
x 10 inches and with baking paper. Finely chop the pistachios and sprinkle them
on top. Bake for about 20 minutes. Allow to cool for a few minutes, unmould
onto baking paper and remove the paper the meringue has baked on. Split the
cake in 8 pieces.
Beat the cream and fold in 1 teaspoon vanilla sugar.
Put a piece of meringue on each plate, add the cream in dabs and sprinkle with
blueberries. Top with more meringue.
