Fillet of pork with bacon - Fläskfilé med bacon

FILLET OF PORK WITH BACON
Fläskfilé med bacon

4 servings

1 1/3 lbs fillet of pork
2 tablespoons butter or margarine

Madeira sauce:
2 shallots
1 garlic clove
1 tablespoon butter or margarine
2 teaspoons brown sugar
2 cups madeira wine
1/4 cup red balsamic vinegar
3 tablespoons concentrated veal bouillon
2 tablespoons Chinese soy sauce
1 tablespoon Maizena for thickening

Topping:
5 oz streaky bacon
grated zest from 1 lemon
some finely chopped parsley

For serving:
raw-fried potatoes
carrots
sugar snaps


Heat the oven to 440F.

Trim the meat, flavour with salt and pepper and brown in fat in a frying pan. Transfer to an oven pan with baking paper and continue frying in the oven until the inner temperature shows approx 165F (it takes about 45 minutes).

Sauce: Peel and finely chop shallots and garlic, then sautée in fat in the pan. Sprinkle with brown sugar and sautée for another minute or so. Add wine, vinegar, bouillon and soy sauce and reduce slowly until about half of it remains. Strain and pour the sauce back into the saucepan. Flavour with salt and pepper, bring to a boil again and thicken with Maizena or corn flour.

Topping: Fry the diced bacon until crisp on medium heat. Put them on a paper towel to soak up the excess fat. Mix with lemon zest and parsley and sprinkle this on top of the meat before serving, or serve it in a separate bowl.
