MERINGUE CAKE WITH SUMMER BERRIES

5 egg yolks
4 tablespoons milk
¾ cup flour
2 teaspoons baking powder
1 cup sugar
2½ to 3½ oz flaked almonds
approx ¾ cup blueberries
¾ cup raspberries

Heat the oven to 300F.

3½ oz room-tempered butter or margarine
2/3 cup sugar5 egg yolks

Meringue:
5 egg whites1 cup sugar
2½ to 3½ oz flaked almonds
Filling:
1 ¾ cups heavy creamapprox ¾ cup blueberries
¾ cup raspberries
Decoration:
¾ cup heavy creamblueberries
raspberries
sliced strawberries
Heat the oven to 300F.
Beat eggs and sugar until fluffy, then stir in the
yolks one by one. Add milk and last flour,
mixed with baking powder. Stir to a
smooth batter.
Beat the egg whites for the meringue with half the
amount of sugar until stiff and foamy. Beat in remaining sugar. Spread out the
batter in a roasting pan dressed with baking paper, approx 12 x 16
inches. Spread the meringue on top and build little “peaks”. Sprinkle with
flaked almonds. Bake in the lower part of the oven for about 35 minutes. Gently
lift the cake and allow to cool.
Remove the baking paper and let the cake cool
completely. Split the cake in the middle. Beat the cream, then put the layers
together with cream and berries in between. Decorate with whipped cream,
blueberries, raspberries and strawberries.
