Swedish vanilla sauce - Svensk vaniljsås

SWEDISH VANILLA SAUCE
Svensk vaniljsås

This is the vanilla sauce I’m always going on about with dessert cakes … Here’s my recipe! :-D

4 servings

2 egg yolks
1 tablespoon sugar
2 teaspoons potato starch
3/4 cup heavy cream
3/4 cup regular milk
1 tablespoon real vanilla sugar (not vanilline)


Beat all ingredients together, except for the vanilla sugar, in a saucepan that’s not made of aluminum (will make the sauce turn grey). Simmer on low heat until the sauce thickens, beating continuously. Cover with a lid and allow to cool completely, beating occasionally. Flavour with vanilla sugar. If you want the sauce creamier, stir in some whipped cream (I always do!).
