3 rounded tablespoons crème fraîche
2 tablespoons chopped dill
salt, pepper
fresh juice from ½ lemon
4 slices white bread

which is incredibly expensive here in Sweden but is
among the best in the world)

Coarsely chop the shrimp and mix with mayonnaise, crème fraîche and dill. Flavour to taste with salt, pepper and lemon juice.
This is a
Swedish specialty even though Skagen is in Denmark. It’s a very popular entrée
dish over here.

oz peeled shrimp (about 1 lb un-peeled)

Toast the
bread and spread with your usual butter. Put on the lettuce leaves and shrimp
mix, then decorate with roe, lemon and dill.
