SALAD WITH PEANUTS
Kycklingsallad med jordnötter
1 lemon grass
1/3 cup coconut milk
1 lb chicken fillets
2 teaspoons chili flakes
salt, pepper
1/3 cup peanut butter
1/3 cup peanuts
a piece of cucumber, 4 inches
3½ oz sugar snaps
1 fistful of baby spinach
2 limes
chopped parsley
Boil the rice, but add ginger and chopped lemon grass in the water. When the rice is done, stir in the coconut milk.

A lovely salad with both peanuts and
peanut butter. It’s best served warm.
4 servings
¾ cup jasmine rice
2 tablespoons fresh, grated ginger1 lemon grass
1/3 cup coconut milk
1 lb chicken fillets
2 teaspoons chili flakes
salt, pepper
1/3 cup peanut butter
1/3 cup peanuts
a piece of cucumber, 4 inches
3½ oz sugar snaps
1 fistful of baby spinach

chopped parsley
Boil the rice, but add ginger and chopped lemon grass in the water. When the rice is done, stir in the coconut milk.
Fry the chicken in some butter or
oil, flavoured with chili flakes, salt and pepper. Stir in the peanut butter
towards the end.
Mix the rice with peanuts, diced
cucumber, sugar snaps cut diagonally, chopped baby spinach and the chicken on a
large serving plate. Decorate with lime and sprinkle with chopped parsley.
