Sausage dinner - Korvmiddag

SAUSAGE DINNER
Korvmiddag

4 servings

1 3/4 lbs Falu sausage or other similar sausage, coarsely diced
1 onion, diced
2 to 3 tablespoons butter or margarine
1 green bell pepper, diced
1 lb fresh, skinned tomatoes or 1 can peeled, 14 oz
4 oz fresh mushrooms, sliced
salt, white pepper, paprika
some crumbled parsley


Sauté onion and half of the bell pepper. Add the tomatoes. If you use fresh tomatoes, you also add a little bouillon, but if not, it’s enough with the juice from the canned tomatoes. Boil until the sauce is smooth and the tomatoes are tender. Add the mushrooms and flavour to taste with the spices.

Sautée the diced sausage in some butter or margarine. Put it on a hot serving plate and pour the tomato sauce on top. Serve with boiled potatoes or pasta and a green salad with remaining bell pepper.

As you can see in the picture, we used another type of sausage.
