FILLED POTATOES WITH TOMATO SAUCE
Fyllda potatisar med tomatsås
1 ¾ oz butter or margarine
1/2 lb ground pork
3½ oz boiled or smoked ham
1 tablespoon flour
1/3 cup red wine or bouillon
1 egg
1 bunch parsley
3 tablespoons grated cheese
salt, pepper, paprika
2 tablespoons butter or margarine
1 lb fresh tomatoes
or 1 can peeled, whole tomatoes, 14 oz
Boil the potatoes (do not peel them) and let cool. Sauté the finely chopped onion in the fat, add the ground pork and the finely diced ham and let it fry for a while. Dust with some flour, add red wine or bouillon and remove from heat. Stir in the chopped parsley, eggs and cheese and flavour to taste with spices.

8 middle-sized potatoes
1 onion or leek1 ¾ oz butter or margarine

Sauce:
1 onion, finely chopped2 tablespoons butter or margarine
1 lb fresh tomatoes
or 1 can peeled, whole tomatoes, 14 oz
Boil the potatoes (do not peel them) and let cool. Sauté the finely chopped onion in the fat, add the ground pork and the finely diced ham and let it fry for a while. Dust with some flour, add red wine or bouillon and remove from heat. Stir in the chopped parsley, eggs and cheese and flavour to taste with spices.
Peel the potatoes and cut them in one end so that
they can stand upright. Gently “dig them out”, fill them with the ground meat
mixture and put them in a greased, oven-proof dish. Bake at 440F until
the meat is nicely coloured.
Sautée the finely chopped onion for the sauce in
butter or margarine. Add the tomatoes and let it all boil together to a smooth
sauce. Flavour to taste with salt, pepper and paprika.
Serve straight from the oven with the tomato sauce
and a green salad.
