Fried ham with sautéed onions - Bräckt skinka med lökfräs (retro)

FRIED HAM WITH SAUTÉED ONIONS
Bräckt skinka med lökfräs

Smoked ham is good in the summer for light dinners, and why not fry it and serve it with sautéed onions for a change? This was something we often had in our summer home, when we spent most of the time down by the lake and didn’t have the energy to cook elaborate dinners but just went up to the house to cook, eat, and then down to the water again.

4 servings

8 slices smoked ham
3 onions
3 middle-sized apples
4 skinned tomatoes
2 tablespoons butter or margarine
1 tablespoon oil
salt, white pepper
½ teaspoon dried basil


Peel and thinly slice the onions. Cut the apples in wedges. Lightly fry the ham in a pan. In another pan you let onions, apples and skinned tomatoes in pieces simmer until tender in a mix of butter or margarine and oil. Flavour with salt and pepper and basil.

Put a large spoon of onion sauté mix on each ham slice and serve immediately with boiled new potatoes. A tossed green salad is lovely with this (no need for tomatoes in the salad since they are already in the dish itself, if you don't absolutely want it, that is).
