Veal liver with tomatoes and green beans - Kalvlever med tomater och gröna bönor

VEAL LIVER WITH TOMATOES AND GREEN BEANS
Kalvlever med tomater och gröna bönor

2 servings

1 small onion
butter or margarine for frying
7 oz tomatoes
7 oz green beans
2 fine slices veal liver
salt, pepper
more butter or margarine for frying


Peel and thinly slice the onion. Fry it in a pan with fat without taking colour. Add coarsely chopped tomatoes and trimmed beans, dilute with some water and simmer for about 10 minutes until the beans are ready.

Flavour the liver with salt and pepper, then fry on both sides – not too long though or it will be dry, tough and very, very boring!

If you use frozen beans they won’t have to boil as long.
