OVEN-BAKED
COCONUT APPLES

2 tablespoons sugar
1/3 cup sugar
2 tablespoons flour
1 ¼ cups grated coconut
1 ¾ oz coarsely chopped walnuts
1 ¾ to 2½ oz melted butter or margarine
1/3 cup light-colored treacle/molasses
¼ cup sugar
2½ oz butter or margarine

large red apples of your choice

tablespoons butter or margarine2 tablespoons sugar
Coconut
topping:
1 egg1/3 cup sugar
2 tablespoons flour
1 ¼ cups grated coconut
1 ¾ oz coarsely chopped walnuts
1 ¾ to 2½ oz melted butter or margarine
Caramel
sauce:
1/3 cup heavy cream1/3 cup light-colored treacle/molasses
¼ cup sugar
2½ oz butter or margarine
Heat the oven to 350F.
Wash
and core the apples, but not all the way through. Make the hole a little
bigger, so that some of the filling gets down inside the apples. Place the
apples in a greased, oven-proof dish. Melt the fat and brush over the holes,
sprinkle with sugar and bake in the middle of the oven for about 15 minutes.
Meanwhile,
make the coconut topping. Beat egg and sugar until fluffy. Mix flour, grated
coconut, chopped walnuts and melted fat in another bowl and stir the two
mixtures together. Leave to expand for about 10 minutes.
Divide
the topping inside and on top of the apples and continue baking for 10 to 15
minutes until the topping becomes nicely golden brown.
Pour
the ingredients for the caramel sauce in a saucepan, bring to a boil and simmer
while stirring until the sauce thickens and gets a nice, light brown colour.
