FANTASTIC RASPBERRY TOSCA

2 tablespoons sugar
6 oz butter or margarine
1 egg yolk
1/3 cup sugar
1½ teaspoon flour
2 tablespoons heavy cream
5 oz flaked almonds
Heat the oven to 350F.

Makes 16 pastries (rather small)
Shortcrust dough:
1½ cup flour2 tablespoons sugar
6 oz butter or margarine
1 egg yolk
Tosca:
2½ oz butter or margarine1/3 cup sugar
1½ teaspoon flour
2 tablespoons heavy cream
5 oz flaked almonds
Filling and decoration:
approx 4 oz raspberries, preferably freshHeat the oven to 350F.
Blend the ingredients together to a smooth dough. Roll
or “thumb” it out in small foil baking tins or aluminum tins. Put them in the
fridge.
Tosca: Mix the ingredients in a saucepan and bring to
a boil. Remove from heat and allow to slightly cool.
Put one or two raspberries in every tin and pour tosca
batter on top. Bake in the lower part of the oven for about 20 minutes.
