White chocolate sticky cake - Kladdkaka med vit choklad

WHITE CHOCOLATE STICKY CAKE
Kladdkaka med vit choklad

1 cake, 8 to 10 pieces

Flaked coconut for the baking pan
3½ oz butter or margarine
3½ oz white chocolate
¾ cup sugar
2 teaspoons vanilla sugar
2 eggs
grated zest from 1 lemon
1 cup flour
1/3 to ¾ cup
raspberries and blueberries


Grease a springform pan, diameter approx 9 inches, and sprinkle with flaked coconut.

Melt the fat, remove from heat and stir in white, chopped chocolate. Stir until the chocolate has melted. Add sugar, vanilla sugar and one egg at a time. Add lemon zest. Sift in the flour while stirring. Pour the batter in the pan and bake at 390F for about 18 minutes.

Allow to set in the pan, then loosen it and put it on a serving plate. Decorate with berries and serve with whipped cream.
