CHICKEN SALAD WITH A TWANG
Kycklingsallad med sting

A generous, fresh salad with a taste of chili and fennel. Fennel is a thing I’ve learned to like as an adult – and I’m grateful for it! Baked fennel with some rich, strong cheese and a little white sauce … But now it’s chicken salad that’s on the wallpaper, another strange Swedish expression – when something is “on the wallpaper” (på tapeten), it’s a subject that we are discussing right now. :-D

4 servings

1 lb chicken fillets
salt, white pepper
soy sauce
chili flakes

Salad:
2 fistfuls mâche salad
1 pomegranate
2 oranges
1/3 cup almonds
1 teaspoon fennel seeds
½ teaspoon chili flakes
2 tablespoons balsamic vinegar
1/3 cup olive oil
1 teaspoon salt


Cut the chicken fillets lengthwise in two and flavour with salt, pepper, soy sauce and chili. Fry them in some oil.

Tear the mâche salad in pieces. Peel and cut the orange into fillets. Cut the pomegranate in pieces and take out the pips. Coarsely chop the almonds and toast it in a dry frying pan with fennel seeds and chili.

Stir together balsamic vinegar, olive oil and salt. Mix all the ingredients on a large serving plate and drizzle the dressing on top.
