Oven-baked chicken "clubs" with lemon and bell pepper - Ugnsbakade kycklingklubbor med citron och paprika

OVEN-BAKED CHICKEN “CLUBS” WITH LEMON
AND BELL PEPPER
Ugnsbakade kycklingklubbor med citron och paprika

In Sweden, we can buy all sorts of chicken parts, which I think you can too. But I’m not sure what name you have for what we call “chicken clubs”. It’s the part of the leg that consists of both the thigh and the drumstick anyway. “Kycklingklubba” in Swedish.

4 servings

1 ¾ lbs chicken “clubs”
1 lemon
1 lime
8 to 10 small, washed potatoes
2 red bell peppers
1 yellow bell pepper
6 garlic cloves
3 tablespoons olive oil
1 small bunch fresh thyme sprigs
1 cup bouillon 
salt, black pepper

For serving:
boiled rice and/or bread


Heat the oven to 390F.

Flavour the chicken with salt and pepper. Flavor the clubs with salt and pepper. Wash the citrus fruits and cut half the lemon in thin slices. Squeeze the other half in a cup. Thinly slice the lime. Split the potatoes and shred the bell pepper. Put the chicken, lemon and lime slices, potatoes and garlic in an oven-proof dish. Drizzle with lemon juice and oil.

Put the dish in the lower part of the oven for 15 minutes. Add the bell pepper and herbs, then pour on the bouillon. Put back in the oven for about 20 minutes until the chicken is done – as you know, that is very important. No red or pink meat juices from the chicken, it should be clear as a spring brook! Turn the chicken over now and then while in the oven.

Serve with boiled rice and/or bread and a salad.
