Fillet of pork stew with peanuts - Fläskfilégryta med jordnötter

FILLET OF PORK STEW WITH PEANUTS
Fläskfilégryta med jordnötter

Lovely, spicy stew with pork fillet. Peanuts on top gives a little extra touch!

1 fillet of pork, approx 1 lb
1 onion
1 garlic clove
2 apples
1 tablespoon curry
2 teaspoons ground ginger
2 tablespoons oil or butter
salt, pepper
1 ¼ cups water
2 tablespoons chili sauce
¾ cup crème fraîche or soured cream
1 teaspoon soy sauce
1 teaspoon sambal oelek
1½ tablespoon flour

Decoration:
1 ¾ oz peanuts
3 rounded teaspoons chopped parsley


Slice the meat. Chop the onion and garlic and cut the apples in pieces. Brown the meat with curry and ginger in fat and flavour with salt and pepper. Transfer to a pot. Brown onion and apple and put in the pot. Add water, chili sauce, crème fraîche, soy sauce and sambal and bring to a boil.

 Mix flour with some cold water and stir this into the pot. Simmer for 5 minutes. Sprinkle with peanuts and parsley and serve with boiled rice mixed with raisins or cranberries – or just plain boiled rice. But don’t forget the veggies!
