EXOTIC CHICKEN AU GRATIN
Exotisk kycklinggratäng

4 servings

2 cups corn off the cob
1 piece of lemon grass, finely chopped
2 tablespoons fresh, grated ginger
2 tablespoons butter or margarine
2 spring onions
2 garlic cloves
1 grilled chicken
3/4 cup coconut milk
3 eggs
chili flakes
3 tablespoons mango chutney
3½ oz grated cheese

Decoration:
leafy parsley


Heat the oven to 390F.

Sautée corn, lemon grass and ginger in some butter or margarine for a couple of minutes.
Chop the spring onions and the garlic cloves. Mix this with corn, lemon grass and ginger in an oven-proof dish. De-bone the chicken and cut the meat in pieces, then mix with the rest in the dish.

Stir coconut milk, eggs, chili flakes, mango chutney and some salt in a bowl and pour this over the chicken. Sprinkle with cheese and bake for about 30 minutes until the gratin is nicely coloured.

Sprinkle with some chopped leafy parsley when serving.
