Spaghetti Milanese - Köttfärssås från Milano

Köttfärssås från Milano

There are as many pasta sauces as there are kitchens in Italy. This wonderful sauce is from the fashion Mekka of Italy – Milan. And the pasta doesn’t have to be spaghetti either, not with all the millions of varieties there is to choose from nowadays. :-D

4 servings

1 onion
1 garlic
1 aubergine
1 red bell pepper
10 oz ground meat (I mostly use a mix of 50% pork, 50% beef)
olive oil
3/4 cup meat bouillon
2 tablespoons fresh, chopped basil
3/4 cup finely grated Parmesan cheese
salt, black pepper


Peel and chop the onion and crush the garlic. Cut aubergine and sweet pepper in pieces. Sautée onion, garlic, aubergine and ground meat in a frying pan until nicely coloured, then add sweet pepper, bouillon and basil. Flavour with salt and pepper. Let simmer for a few minutes, then stir in the cheese.

Serve with pasta and a salad.
