VANILLA CHOCOLATE BUNDLES
Vanilj- och chokladknyten

Makes approx 30 bundles

2½ cups flour
4 tablespoons sugar
salt
4 oz soft butter or margarine
1 ¾ oz yeast
3/4 cup milk
egg for brushing

Filling:
2/3 cup thick custard (vanilla crème)
3½ oz milk chocolate (15 squares)

Decoration:
1 ¾ oz flaked Almonds


Heat the oven to 480F.

Measure the flour (but save ¼ cup), sugar and salt in a food processor. Add the fat in dabs and process for a short while until fat is finely divided.

Crumble the yeast and dissolve it in cold milk in a bowl. Pour this into the dough and process on maximum speed until the dough is smooth and glossy. Knead it on a floured surface and roll out to a rectangle, approx 12 x 14 inches. Cut in squares, 2½ x 2½ inches or a little more, and put a dab of thick custard and ½ chocolate square on each. Fold the corners up and pinch the edges together to a bundle. Put in paper tins on a baking plate.

Cover with a baking cloth and let rise until double in size for about 1½ hours – time depends on the room temperature. Brush with beaten egg and sprinkle with flaked almonds. Bake in the middle of the oven for 8 to 10 minutes.
