CRUNCHY PEACH DESSERT
Knäckig persikodessert
1 tablespoon honey
1 tablespoon cognac or fresh lemon juice
1 teaspoon sugar
4 mid-sized peaches, sliced
2 cups frozen yogurt
1/4 cup water
2/3 cup pecans, coarsely chopped
Put a grease-proof paper on a baking plate and grease it with melted butter or margarine.
Knäckig persikodessert
This heavenly dessert is a combo of juicy peaches
marinated in honey, frozen yogurt and crispy crunch.
4 servings
½ tablespoon butter or margarine
½ vanilla pod1 tablespoon honey
1 tablespoon cognac or fresh lemon juice
1 teaspoon sugar
4 mid-sized peaches, sliced
2 cups frozen yogurt
Crunch:
1 cup sugar1/4 cup water
2/3 cup pecans, coarsely chopped
Put a grease-proof paper on a baking plate and grease it with melted butter or margarine.
Mix sugar and water for the crunch in a saucepan. Heat
on low temperature until the sugar has melted, about 1 minute. Increase the
temp and bring to a boil so that the sugar is golden, 8 to 10 minutes. Remove
from heat and stir in the chopped pecans. Pour straight onto the greased paper
and allow the crunch to cool well, about 30
minutes. Break in pieces and set aside.
Split the vanilla pod lengthwise. Put it in a saucepan
with honey, cognac or lemon and sugar. Heat on low temperature until the liquid
is warmed through, about 1 minute. Take up the vanilla pod, scrape out the
seeds and stir them into the liquid. Put in the sliced peaches and let them
marinate for a few minutes.
Put the sliced peaches in 4 serving glasses, top with
1 spoon of frozen yogurt, pour some of the sauce on top and sprinkle with the
crunch.
