Luxurious salmon roll - Lyxig laxrulle

LUXURIOUS SALMON ROLL
Lyxig laxrulle

4 to 6 servings

1 ¾ oz butter or margarine
2/3 cup water
1/3 cup heavy cream
2/3 cup flour
3 eggs

Filling:
7 oz cream cheese
1 bunch basil
grated zest from 1 lemon
7 oz cold-smoked, thinly sliced salmon

Decoration:
4 to 5 basil leaves
1 lemon


Heat the oven to 390F.

Melt the fat, add water and cream and bring to a boil. Add flour and stir really well until the batter loosens from the bottom of the saucepan. Allow the batter to cool slightly. Add the eggs, one by one, and stir vigorously between each.

Put a baking paper in a roasting pan, size about 12 x 16 inches. Spread out the batter in the pan and bake in the lower part of the oven for about 20 minutes until nicely coloured.

Mix cream cheese, basil and lemon zest and spread most of it onto the omelet in the pan, but save some for decoration. Put the sliced salmon on top and roll up like a jelly roll.

Decorate with remaining mix in dabs on top and also lemon slices and basil leaves.
