ORANGE MUFFINS
Apelsinmuffins
1 teaspoon vanilla sugar
3½ oz butter or margarine
¼ cup milk
1½ cups flour
2 teaspoons baking powder
grated zest from 1 orange
2 tablespoons fresh orange juice
orange “fillets” (skinless orange wedges)
lemon balm
Heat the oven to 390F. Beat eggs, sugar and vanilla sugar. Melt the fat and add the milk. Stir the milk mixture into the egg batter. Mix all dry ingredients and sift this into the batter. Add orange zest and juice and blend well.

Approx 12 muffins
3 eggs
1 cup sugar1 teaspoon vanilla sugar

Decoration:
whipped creamorange “fillets” (skinless orange wedges)
lemon balm
Heat the oven to 390F. Beat eggs, sugar and vanilla sugar. Melt the fat and add the milk. Stir the milk mixture into the egg batter. Mix all dry ingredients and sift this into the batter. Add orange zest and juice and blend well.
Spoon the batter up into paper muffin tins or in a muffin pan. Fill up to ¾ with batter so the
muffins have space to expand. Bake in the middle of the oven for about 15
minutes – try with a skewer.
Decorate before serving with whipped cream, orange
fillets and lemon balm.
