White chocolate blackberry mousse - Vit chokladmousse med björnbär

WHITE CHOCOLATE BLACKBERRY MOUSSE
Vit chokladmousse med björnbär

Serves 4

5 oz white chocolate
1 cup heavy cream
3 egg yolks
1 tablespoon sugar
2 tablespoons grated orange zest
½ teaspoon ground cardamom

Decoration:
3½ oz blackberries
fresh juice from 1 orange
2 tablespoons runny honey
lemon balm (optional)


Chop the chocolate and melt it over a hot waterbath. Beat the cream and also beat egg yolks and sugar until fluffy. Fold the melted chocolate into the cream and then add the egg batter. Last, add orange zest and cardamom. Store cold for a couple of hours. Divide the mousse in 4 serving bowls.

Put the blackberries in a saucepan and heat them up with the orange juice and honey. Pour the berries over the mousse and decorate with lemon balm.
