OVEN-BAKED GOAT CHEESE FILLED SALMON
Ugnsbakad getostfylld lax

4 servings

4 pieces salmon fillet, each weighing approx 5 oz
7 oz chèvre cheese
1 ¾ oz pine nuts
7 oz cherry tomatoes
salt, pepper
1/3 cup sundried tomatoes
fresh thyme


Heat the oven to 350F.

Make a cut in each piece of salmon and put them in a greased, oven-proof dish. Crumble the chèvre and distribute in the pockets. Sprinkle with pine nuts. Split the tomatoes and put them all around. Flavour with salt and pepper and put in the middle of the oven for about 25 minutes.

Shred the sundried tomatoes and put them on top. Decorate with thyme.
