LOVELY STRAWBERRY
CHEESECAKE
Ljuvlig jordgubbscheesecake
When strawberries are in season, make a feast of every day. This cheesecake is lovely!
2 teaspoons vanilla sugar
2 eggs
Filling:
1 vanilla pod
14 oz cream cheese, room-tempered
1 ¾ cups sugar
6 egg yolks
2 to 2 1/3 cups heavy cream
1½ to 1 ¾ cups strawberries, mashed
Decoration:
8 to 10
strawberries in slices
Melt the fat. Mix all dry ingredients in a bowl and add the melted fat. Add the eggs, one by one, and stir between each. Pour the batter in the pan and smoothen the surface. Bake in the middle of the oven for about 12 minutes. Take the layer out – it will set more after a while. Allow to cool completely.
Beat the cream until pretty stiff. Mix cream and mashed strawberries into the batter and spread it out over the cold cake layer. Smoothen the surface, cover with plastic foil and freeze the cake for at least 5 hours.
Take out the cake about 20 minutes before serving. Decorate with sliced strawberries.

Layer:
3½ oz butter or margarine
1 ¼ cups sugar
2/3 cup flour
5 tablespoons
cocoa2 teaspoons vanilla sugar
2 eggs
Filling:
14 oz cream cheese, room-tempered
1 ¾ cups sugar
6 egg yolks
2 to 2 1/3 cups heavy cream
1½ to 1 ¾ cups strawberries, mashed
Decoration:
Heat the oven to 350F. Grease and flour a springform pan, diameter approx 9 inches.
Attach a greased baking paper to the bottom.
Melt the fat. Mix all dry ingredients in a bowl and add the melted fat. Add the eggs, one by one, and stir between each. Pour the batter in the pan and smoothen the surface. Bake in the middle of the oven for about 12 minutes. Take the layer out – it will set more after a while. Allow to cool completely.
Split the vanilla
pod and scrape out the seeds. Beat cream cheese, sugar and vanilla seeds
together to a nice, smooth batter. Stir in the egg yolks, one by one, and stir
well between each.
