SWEDISH FALUKORV STEW ASIAN STYLE
Svensk falukorvsgryta à la Asien
1 leek
1 red bell pepper
1 yellow bell pepper
½ red chili fruit
5 oz sugar snaps
1 head of broccoli
3 teaspoons red curry paste
(or according to your taste)
zest and juice from 1 lime
1 can coconut milk
3 tablespoons tomato paste
2 tablespoons chopped chives
a tossed salad
Shred the sausage. Heat the fat in a frying pan and brown the sausage. Trim and shred the leek. Trim the sweet peppers and make sure to remove all seeds. Cut them in shreds as well. Trim and shred the sugar snaps, trim and divide the broccoli in florets. Turn all the vegetables except for the sugar snaps into the sausage. Keep frying for a couple of minutes until the vegetables are glossy and smooth but without taking colour.

With the help of coconut milk and
red curry paste you give this Swedish falukorv dish an Asian touch. You decide
the strength yourself depending on how much curry paste you use. Red curry
paste is a moist Thai spice mix which is sold in every grocery store.

1 lb Falu sausage
2 tablespoons butter or margarine1 leek
1 red bell pepper
1 yellow bell pepper

Shred the sausage. Heat the fat in a frying pan and brown the sausage. Trim and shred the leek. Trim the sweet peppers and make sure to remove all seeds. Cut them in shreds as well. Trim and shred the sugar snaps, trim and divide the broccoli in florets. Turn all the vegetables except for the sugar snaps into the sausage. Keep frying for a couple of minutes until the vegetables are glossy and smooth but without taking colour.
Add curry paste, zest and juice from
lime, coconut milk and tomato purée. Add the sugar snaps and let everything
simmer for a few minutes. If you wish you can thicken the sauce with some
Maizena. Chop the chives and sprinkle this over the dish. Serve
with rice and a salad.
You can use yellow curry paste
instead of red.
