LUXURIOUS MAZARIN SQUARES

3 eggs
1 or 2 drops bitter almond essence
7 oz almond paste
2½ cup flour
2½ teaspoons baking powder
2 teaspoons vanilla sugar
1 cup milk
3 to 3½ tablespoons water
2 to 3 tablespoons strawberry jam
Heat the oven to 390F.

10 oz soft butter or margarine
1½ cup sugar3 eggs
1 or 2 drops bitter almond essence
7 oz almond paste
2½ cup flour
2½ teaspoons baking powder
2 teaspoons vanilla sugar
1 cup milk
Glaze:
1 ¾ cup powdered sugar3 to 3½ tablespoons water
2 to 3 tablespoons strawberry jam
Heat the oven to 390F.
Stir fat and sugar until fluffy. Add the eggs, one
by one, while stirring. Add the bitter almond essence and the grated almond
paste. Mix flour, baking powder and vanilla sugar and stir this into the batter
alternating with milk.
Spread out the batter in a small roasting pan,
approx 10 x 14 inches and covered with baking paper. Bake in the
lower part of the oven for about 25 minutes. Allow to cool.
Glaze: Stir powdered sugar and water and gently
spread this on top of the cake. Drizzle with strawberry jam, preferably such
smooth jam you can buy in bottles (at least here in Sweden, we call it
Squeezy). Try to mix jam and glaze a little with the help of the blunt end of a
knife. Leave to set, then cut in squares and serve.
