Green pepper schnitzel from Rönne - Grönpepparschnitzel från Rönne

GREEN PEPPER SCHNITZEL FROM RÖNNE
Grönpepparschnitzel från Rönne

Rönne is the main city on the island of Bornholm in Denmark. Shredded schnitzel of veal is delicious, and served with green pepper sauce and small diced vegetables you have a festive, flavourful dish.
4 servings

1 to 1 1/3 lbs schnitzel of veal
1 carrot
1 ¾ oz squash
1 small red bell pepper
2 tablespoons butter or margarine
salt, pepper
1½ tablespoons flour
¾ cup water
¾ cup cream, 15 to 20% fat
¾ to 1 meat bouillon cube
½ tablespoon green pepper
1 teaspoon soy sauce
½ tablespoon cognac

Cut the meat in shreds, approx 1 inch. Peel the carrot, then cut carrot, squash and bell pepper in very small dice. Melt 1 tbsp fat in a large frying or sauté pan and brown the meat until coloured. Flavour with salt and pepper. Sprinkle with flour and blend in water, cream, bouillon cube, green pepper and soy sauce. Cover and simmer slowly for about 10 minutes, stirring occasionally. Flavour with cognac, salt and pepper.

Melt remaining fat in a frying pan or saucepan and sizzle the carrot for a few minutes. Add squash and sweet pepper and sizzle the vegetables for a few minutes more. Flavour with salt and pepper.

Serve the shredded veal schnitzel straight from the pan or put it on a serving plate. Top with the diced vegetables, sprinkle with chopped parsley and serve.
