Auntie's almond cake - Mosters mandelkaka

AUNTIE’S ALMOND CAKE
Mosters mandelkaka

A very easy-to-bake cake that can’t fail. A recipe easy enough for even smaller children to make.

1 cake, approx 18 slices

6 oz butter or margarine
1 ¼ cups sugar
4 eggs
2 cups flour
1/3 cup grated almonds
1 tablespoon vanilla sugar
1 teaspoon baking powder
1/3 to ¾ cup raisins
1/3 cup orange juice


Stir fat and sugar until fluffy and add the eggs, one by one. Mix flour, almonds, vanilla sugar and baking powder in a bowl. Blend this, the raisins and orange juice into the egg batter.

Pour the batter in a greased, breaded cake ring (Bundt pan), holding 6 cups. Bake in the lower part of the oven at 350F for 45 to 50 minutes or until the cake is done. Allow to cool in the pan, then unmould on a rack and let cool.

Cut the cake in slices and serve.
