CHEESE-COATED SALMON FILLET

4 tablespoons Parmesan cheese
4 tablespoons dried breadcrumbs
2 tablespoons French mustard
1 tsp salt
2 teaspoons melted butter or margarine
3 tablespoons white wine vinegar
2 crushed garlic cloves
2 tablespoons chopped onion
1 teaspoon dried Rosemary
Cut the fish fillets in 4 serving-sized pieces and put them in a dish. Mix the marinade and pour it over the fish. Let the fish marinate for 1 to 2 hours in room temperature or 2 to 8 hours in the fridge.

Here you can choose between a less elaborate and a
little more festive version of the dish. Cod or salmon, you choose yourself!

1 1/3 to 1 lb 7 oz salmon or cod fillets
¾ cup grated cheese4 tablespoons Parmesan cheese

Cut the fish fillets in 4 serving-sized pieces and put them in a dish. Mix the marinade and pour it over the fish. Let the fish marinate for 1 to 2 hours in room temperature or 2 to 8 hours in the fridge.
Mix grated cheese, Parmesan, dried breadcrumbs and
mustard on a plate. Take up the fish, flavour it with salt and coat it with the
cheese mixture. Put in an oven-proof dish and sprinkle with remaining cheese
mixture. Pour the melted fat over the fish, then fry in the middle of the oven
at 390F for 10 minutes. Increase the heat to 440F and fry for
another 5 to 10 minutes or until the fish is done. Serve and enjoy!
