CRUNCHY APPLE CAKE
Knäckig äppelkaka

An apple cake is as good as a dessert or as a cake with coffee or tea. Cinnamon and apples is an unbeatable combo if you want to make a delicious apple cake.

4 to 6 servings

4 to 6 apples
1 cup nuts
2 tablespoons sugar
2 teaspoons ground cinnamon
6 oz butter or margarine
1 cup brown sugar
1 cup flour
2 eggs

Decoration:
powdered sugar, walnuts
and fresh mint


Peel, core and cut the apples in wedges. Coarsely chop the nuts. Put the apple wedges in a greased, oven-proof dish and sprinkle them with sugar and cinnamon. Melt the fat and allow to cool slightly. Mix it with brown sugar, flour and nuts in a bowl. Add the eggs and stir until well blended.

Spread the batter over the apples and bake in the middle of the oven at 350 to 390F for 35 to 40 minutes or until the apples are tender and the surface is coloured.

Dust the cake with powdered sugar, sprinkle with some chopped nuts and decorate with fresh mint leaves.

Serve the cake with vanilla sauce, whipped cream or ice cream.
